Ginger Pear Shrub Prosecco

1 part ginger pear Purely
1 part thyme simple syrup (recipe below - optional)
3 parts Prosecco
thyme for garnish

For Thyme Simple Syrup
½ cup water
½ cup sugar
3 thyme sprigs

Make syrup: In a small saucepan, combine water, sugar, and thyme sprigs over medium heat. Stirring, bring to a simmer until sugar dissolves. Remove from heat and let cool to room temperature. Remove thyme sprigs. Store syrup in a glass jar and refrigerate.

In cocktail glass, stir together pear shrub and thyme simple syrup. Top with Prosecco and garnish with thyme.
